Name is just arbitrary value, so you can call it "Host1" for example. 

In the "Address field", you can put either an IP, or a FQDN. If you have DNS in your environment, it may be a good idea to use the FQDN instead of the IP address in the "Address" field. That way, you can just update your DNS with the new IP address of your host, and not have to worry about updating it in the engine. 

In any case, you can remove the hosts from the Hosts tab of the engine, and re-add them using the "New Host" button. You won't have to reinstall anything on the host side, the engine will take each host through all of the installations steps, which should be fast because all of the required packages are installed already. You'll need to put your hosts into maintenance mode before removing them.

Sounds like the engine still works, and I guess you are accessing the web portal using its IP address. 

What are you trying to get working? 

Did you want to access your engine using something like engine.yournet.com? If so, you'll need some form of DNS for that as well. Like I said before, if you have DNS already, then you can just change the IP address that engine.yournet.com resolves to in your DNS. What did you answer when setup asked you to provide a FQDN for your engine (in /var/log/ovirt-engine/engine-setup-SETUPDATE if you can't remember) ?

If you don't have any DNS, then you won't be able to use hostnames to address your hosts and engine. In this case, DHCP is not the way to go.
