Creating a iSCSI bond is indeed the recommended way to use iSCSI multipathing with oVirt
http://www.ovirt.org/Feature/iSCSI-Multipath#iSCSI_Bond_behaviour
But it relies on oVirt logical network that are still not available when you are deploying hosted-engine and with oVirt 3.5 you cannot than edit the hosted-engine storage domain.
A manually configured bond should work but than is not directly managed by the engine for additional hosts.

hosted-engine is generally working with bonded interface and they generally survive but honestly I never directly tried deploying hosted-engine on iSCSI over bonded interface.
Please report us if you find any issue with that.

I think no, currently you cannot edit the hosted engine storage domain from the engine to configure the iSCSI bond involving another logical network.
We are working on that for 3.6
