While running on the host, the logs are written in /tmp/.... At the end of the execution of ovirt-host-deploy, the logs are copied over ssh to the engine host and saved under /var/log/ovirt-engine/host-deploy/
So in ovirt-host-deploy output during its execution you should see saving logs in /tmp and at its end you should see a ssh copy back to the engine.
