Yes, you can start with the engine and then reinstall hosts one by one using oVirt Node 4.2.8. Once finished you can change cluster compatibility level to 4.2 for consuming new features included in 4.2.
 
I thought I could reinstall the hosts still in version 4.1 and upgrade later but I will follow your advice.

You can reinstall 4.1 hosts but 4.1 is not compatible with CentOS >= 7.5 so you'll miss all the security fixes from the past year including meltdown and spectre fixes.
I would recommend to use 4.2.8.
