I think there are no ready pdf.

I think the best you can get is print to pdf these thre pages:

for install

for admin

http://www.ovirt.org/OVirt_Administration_Guide

for user portal

http://www.ovirt.org/OVirt_User_Guide

They should be synchronized with latest stable release.
