The OS stll appears to be CentOS 8 - how do I perform the conversion to
Stream? I can't find anything doco-wise about it.

Please note the CentOS Linux 8 content is going to be moved to vault.centos.org in 3 days and ti will start breaking updates https://www.centos.org/centos-linux-eol/
