Just detach the storage domain (for consistency).
Than you can "tar" the whole thing, maybe other methods
work too, but most do not very well when it comes to sparse files.
Use tar with the "-S" flag.

PS: There is also a backup api and you can try to backup running
vms with live snapshots.
