Yes you can upgrade without a 4th host.

Actually, first update to latest 4.3.10 or your backup won't be valid for update to 4.4

You will need to set one of the hosts into maintenance and then reinstall that host with EL8 (CentOS or another).
Once you install that node, you need to readd it to the Gluster Cluster and then deploy from backup the new engine (use new gluster volume) using that EL8 host.

Once it's successful, the rest of the hosts should be available and you will be able to remove one of the other nodes, reduce gluster, reinstall , get gluster running and add the host again in oVirt.
