If you use CentOS 8.4, you will be able to switch to stream but also you have the possibility to switch to any other EL8 clone at the end of the year.

Drawback with non-Stream is that oVirt is tested against Stream and some features won't be available immediately (as Stream packages are a little bit ahead).
