Having all networks on the same VLAN is almost the same as having one network on multiple nics (using bond).
The later has the advantage of load balancing and redundancy options.
When networks are separated, usually that is maintained on the local LAN/s as well (full L2 separation across your site).

Having multiple interfaces on the same subnet is not a problem in Linux, but in some special scenarios you may encounter challenges. You will have to try it out.
