Rebasing Node on AlmaLinux (https://github.com/oVirt/ovirt-node-ng-image/issues/49) and RockyLinux (https://github.com/oVirt/ovirt-node-ng-image/issues/46) is something that was already being planned. It's just a matter of someone working on it.
Config files for both are already there: https://github.com/oVirt/ovirt-node-ng-image/tree/master/data
You can try building it locally with `build.sh` and check its current state.

Rocky is committed to the full 10-year life cycle of RHEL.  Whereas
CentOS Stream 9 ends when the "full-support" cycle of RHEL ends and
RHEL's maintenance-only begins.  This means that CentOS Stream 9 will
EOL in early 2027; just three short years away.

Maybe someone's arm at Rocky can be twisted to push oVirt in their
direction.
