We've been using Scientific Linux 7 quite successfully with oVirt for

How bad of an idea is it to have a 8 system when the rest are 7 even
though the version of oVirt will be the same?

Please note the oVirt version can't be the same on el7 and el8 because hosts on el8 are supported only by oVirt 4.4 and oVirt 4.4 is not available on el7.
You can upgrade the engine to 4.4 and then add el8 hosts while still keeping el7 hosts until you finish the upgrade.
