is there any chance to remove the broken postgresql-jdbc package (or issue a new version with the rollbacked changes ) untill the issue is fixed ?

Sadly we can't get postgresql-jdbc removed from CentOS Stream repository but +Eli Mesika and +Martin Perina are working on a fix on oVirt side: https://bugzilla.redhat.com/show_bug.cgi?id=2077794
