ovirt engine is not perfect, but this is not an ovirt engine issue...

The easiest way would be to restore your engine database from the backup, but
I guess that you don't have one.
You can connect your hosts again to the same iscsi server, and then you
can import the domains from storage, getting back all your vms and disks.
This was introduced in ovirt 3.5.
