I've an answer... Here's how I did it...
First, I needed kpartx ... so
#apt-get install kpartx
Then setup a loopback device for the raw hdd image
#losetup /dev/loop4 [IMAGE FILE]
#kpartx -a /dev/loop4
This allowed me to mount the various partitions included in the VM. There
you can modify the configs, make backups etc.

I was asking how to/do I mount the VM's disk in a way to be able to
pull/modify files that are on the HDD of the VM.

If you want to copy the image file. you can mount the gluster volume and
copy it.
using mount -t glusterfs <gluster-server>:/<volumename>
<path-to-mount>
