Thanks Miguel,
if we configure it connect to a physical network and select the
Data Centre Network I assume it will create the overlay network on top of that logical
network.
Also is there any documentation about the ovn-provider-network architecture.

Yes, OVN sets up an overlay network on top of ovirtmgmt network.
