Vlans are never physical and i think you are mixing something up.. Vlan
literally stands for virtual lan.
But as long as you follow procedures for shutting down according to
documentation and on an connectivity level nothing changes after starting..
then yes it should be transparent and fine.
Just make surenothing changes at layer3 and that the layer2 design is the
same from hosts point of view.

the configuration of ovirt kvm there are no virtual VLANS, only network
interfaces and a bonded interface.
Procedures:
i) Shutdown all Vm´s
ii) Shutdown all KVMs and Ovirt-engine
iii) Changing the switches (Hardware)
iv) Start the entire environment
I think there will be no problems ... all of this will be transparent for
ovirt. Correct ...?
