In VMWare; this can be accomplished by nic teaming/trunking (802.3 ad) and then pass the traffic to the switch.
From what I have read in oVirt I need to define ovs switches first; I'd like to simply pass L2 to the switch directly.

Hi,
there is nothing special for this case because a simple network defined without VLAN filtering should pass every traffic. If you want to pass the traffic into VM I would suggest to start without any traffic filter.
