But what difference between the Enterprise Linux Hosts and oVirt Nodes ?

Nothing much really. It is two ways to get to the same result.
Use a CentOS minimal OS install, plus the oVirt packages from the repository.
Or an oVirt Node ISO with all of the necessary package included. Patchable and upgradable
from the respective repositories.
