Hello ,
I'm doing a developer mode installation for ovirt-engine. I'd like to install it
based on CentOS 8 Stream, but no matched version of postgresql packages are provided.
Which CentOS version should I start this work?

Hi,
have you check the developer mode documentation?
https://github.com/ovirt/ovirt-engine/#developer-mode-installation
As mentioned there you need postgresql 12 or higher, so in CentOS Stream 8
you need to enable the correct dnf module, which provides the right
postgresql version:
dnf module -y enable postgresql:12
There are also other dnf modules which you will need to enable on CS8, more
or less you will need the same modules as in production installation:

I'm checking the developer mode documentation and just installed the packages listed
under prerequisites. Now I come this line:
Note on Java versions
The project is built and run using java 11. 4.3 branches and earlier are excluded.
The java version in my CS8 is as :
java-1.8.0-openjdk-headless-1.8.0.352.b08-2.el8.x86_64
java-11-openjdk-11.0.17.0.8-2.el8.x86_64
java-11-openjdk-headless-11.0.17.0.8-2.el8.x86_64
java-11-openjdk-devel-11.0.17.0.8-2.el8.x86_64
Should I change/upgrade java? Any easy way to do it like `dnf module switch-to`?

That's OK OpenJDK 1.8 is the default version for CS8, it cannot be removed
java-11-openjdk-11.0.17.0.8-2.el8.x86_64
java-11-openjdk-headless-11.0.17.0.8-2.el8.x86_64
java-11-openjdk-devel-11.0.17.0.8-2.el8.x86_64
That's OK, OpenJDK 11 is required for oVirt. The easiest way to force using
OpenJDK 11 is to set JAVA_HOME in $HOME/.bash_profile:
JAVA_HOME=/usr/lib/jvm/java-11
PATH=$JAVA_HOME/bin:$PATH
export JAVA_HOME PATH
That way you will ensure that you are using OpenJDK 11

?
The lines you were showing are just a consequence of stopping the setup due
to previous error. The real error is earlier in the log (you can search for
lines with "ERROR" levels)
