Hi,
Information about the native vs. legacy USB support is well explained in http://www.ovirt.org/Features/SPICERelatedFeatures
As for monitor number, it defines the number of monitor devices on the guest. Practically, what it gets you is a second client window that you can extend your guest desktop onto.
(some details on that are also on the same wiki page).
