Alex,
  We have used iSCSI in our environment for several years now (mostly 
with VMWare.. but now with RHEV and oVirt for ~1 year)

  While I may not be able to answer your questions in great detail 
perhaps I can at least help shed some light. I also think that Vered's 
comment about the documentation is a great idea and perhaps you and I 
can help add that to the wiki.

   I'm actually in the middle of recovering from an ovirt disaster (we 
lost our management server and didn't have quite all the backups we needed)
   As soon as I get done with that I'll do a little digging in to your 
question and explain what I have for my set up. Feel free to email me 
directly and perhaps we can meet up on IRC.
