[Users] rebuild of src.rpm not "self contained"?

On an all-in-one 3.2 stable I have @home, based on f18, I was able to
modify the source part of ovirt-engine.sc.rpm
(to test fix in VmBase.java referred in another thread) and
rebuild from src.rpm and I got these packages

Questions:
1) in this out-of-line update (I retained same version in packages,
waiting for an official fix) how can update?
Simply stop engine and
rpm -UVH --force *rpm
and restart engine?
2) In general when I start from a src.rpm, the build is sort of
self-contained. Instead for ovirt-engine it downloaded many packages
from web sites (maven, atlassian, ecc...) during the build. How can I
be sure that my build is the same today and tomorrow, starting from
the same src.rpm?
