I don't know if oVirt is "breaking the rules" for using LVM, but in regular 
Linux all you have to do is:
pvcreate to create a new PV on the available space
vgextend to add the new pv to the existing vg
enjoy additional space.

Others will have to chime in on whether oVirt breaks this process somehow (I 
am using gluster for my storage), but I doubt it.
