very easly, use os-info to change vnc/cirrus to vnc/vga for the OS you like
you need to create 10-osinfo.properties under share/ovirt-engine/conf/ to override os configurations

(look at osinfo-defaults.properties and in http://www.ovirt.org/OS_info for more info )
