This also depends on the Gluster team, they will have to support the
issues.
From storage point of view, we don't have any preferences for Gluster
version in storage
and we don't depend on any feature added by Gluster 7.
Both versions are also not tested by storage QE. Adding Avihay to confirm.

Correct, we test either with glusterfs 6.3 or older.
