Hello,
I'd create a new engine wirh rhv, move to maintenance/detach an host and reinstall
with rhv. Then detach one by one storage domains on ovirt and attach to rhv, importing the
vms.
This should work.

Move all the VM’s to the RHV host and than do the same process. After it install a new
RHVH-M to remove the oVirt Engine. Not sure if this would work or not.
Considering that you wrote, and I emphasize, "supported", I think this
is best asked in a RHV support ticket, not on an oVirt mailing list.
Even if people here, even Red Hat employees, come up with solutions
that seem to work, they'll probably be useless for you if the result
is not supported by Red Hat.
I can tell you that this subject came up internally (at Red Hat)
multiple times, and I am not aware of an approved and final reply yet.
We do have this (open, for now) RHV doc bug:
https://bugzilla.redhat.com/show_bug.cgi?id=1702831
