Depends what you mean by "sync" and "swap". If you can keep the same NFS endpoint, but swap-in your upgraded storage under the hood then I think you can do as you propose. Stop all VMs, put the storage domain in maintenance, make you changes and bring the domain out of maintenance. However, if you're moving to a different NFS server, or even different path on the same server then I think the answer is no.
