If you would like to customize the UI to fit your needs, like adding new tabs, new action buttons, and etc., then I recommend reading the wiki pages about UI plugins:

As for the architecture information, there is an architecture page on http://www.ovirt.org/Architecture, but it doesn't have a lot on GWT.
