Ovirt is a Layer above that - it manages the Virtualization and anything related to that
(host kernel parameters ,etc).
As it runs on CentOS & RHEL - you just need to be sure that the OS has a module for
that.
Keep in mind that oVirt 4.4 is moving to CentOS/ RHEL 8, so you have to check if the RAID
card you plan to use is supported, or you can consider if software raid is an option.
You always have the option to get your own kernel, but there is no guarantee that
everything will be working flawlessly.
Just ask in the CentOS user list about the raid cards the others are using ( CentOS 8).
